Cookery Masterclass

5th, 12th, 19th and 26th October

Whether you are a beginner, a keen cook or simply a food enthusiast seeking to try your hand and take your skills to the next level, our cooking school classes hosted by Master Chef Steven Saunders is the perfect ingredient!

This October we will have 4 set focus day classes where you will get to learn how to cook some of Steven’s most popular dishes, best preparation and methods.  The course will see you cover first courses (starters), fish and meat dishes followed by desserts and vegetarian options as well as wine pairing considerations.  A 3 course lunch with wine will also be included in each day class for you to enjoy!  If you ever fancied the chance to learn to cook like a Master Chef, then this is ideal opportunity.

Programme

The day’s itinerary will entail:

  • Meeting at 11am in The Little Geranium Marbella restaurant, a coffee, introductions and overview of day ahead will follow
  • 11.30am enter kitchen for 2.5 hours demonstrations and hands on personal training
  • 2pm (approx.) finish training and break for lunch
  • 3 course lunch served in our restaurant with wines (includes water)
  • Finish 4pm.

First Courses

This class has 3 of Steven’s most popular starters available to demonstrate and gives you the opportunity to get involved and hands on.  The starters are:

  • Famous crispy duck salad
  • Making a terrine of venison and foie gras
  • Goats cheese wellington

This class will also include:

  • Bread making demonstration and a chance to make your own
  • Make a fantastic soup for the ‘amuse de chef’

Lunch

A 3 course menu will be served selecting your own breads and a starter from the days course, a meat main dish followed by dessert.

Lunch menu to be confirmed. Does include choice of white, red or rose wine.

Fish Dishes

This class will focus on fish dishes, preparation and cooking methods along with fish sauces.   Steven will demonstrate and give you the opportunity to get involved and hands on.  You will learn how to:

  • Make a shellfish bouillabaisse sauce
  • Cook a bouillabaisse
  • Prepare sea bass and tuna
  • Cook sea bass and make langoustine mousse
  • Cook a Tuna dish
  • Make fish stock and veloutes

Lunch

A 3 course menu will be served with a fish starter, main dish, followed by a dessert.

Lunch menu to be confirmed. Does include choice of white, red or rose wine.

Meat Dishes

This class will focus on meat dishes incorporating souvide and meat sauces.  Steven will demonstrate and give you the opportunity to get involved and hands on.  You will learn how to:

  • Prepare venison and beef fillet
  • Prepare and cook foie gras
  • Make fantastic meat sauces and stock
  • Make a Venison dish
  • Make a Beef dish
  • Souvide duck for duck dish

Lunch

A 3 course menu will be served with a meat starter and main dish followed by a dessert.

Lunch menu to be confirmed. Does include choice of white, red or rose wine.

Desserts & Vegetarian

This class will focus on desserts and vegetarian where Steven will demonstrate and gives you the opportunity to get involved and hands on.  The following will take place:

  • Make vegetable sauces and purees
  • Make soufflés for vegetarians and desserts
  • Make meringues
  • Make mousses
  • Make iced parfaits
  • Wine tasting with bio dynamic wines

Also included in this class will be a wine tasting and wine pairing explained and demonstrated

Lunch

Lunch will be served with a vegetarian starter, main, dessert & cheese with some wine pairing.

Pricing:

  • €155 for individual days
  • €540 for complete course
    (€135 per day)

Payment will be required following sign up confirmation at either our La Cala or Marbella restaurant. Bank transfer also accepted.
